The traditional Kimoto production method, which involves a labor intensive process of hand mashing the rice, water, and koji to create a robust fermentation starter, contributes to its complex and layered profile. With an ABV of 14. 8%, this sak offers warming notes of chestnut, applesauce, and white pepper. Its robust flavors complement
