Produced by small lot farmers along the Popayan Plateau in Colombia's Cauca region, this coffee was handpicked, pulped and washed at each contributing farm. The coffee sold to a local dry mill in parchment form where it undergoes a selection process and preparation for export grade. The decaffeination was performed in Colombia by Descafecol, using natural ethyl acetate from sugar cane plants (hence why this process is also
