Le vent dans les Voiles 2023 OP_estivale_2026 issu à 100% du cépageThis wine comes from 41 year old vines grown on clay limestone soil and is currently being converted to organic farming. Its vinification respects the integrity of the grapes, with fermentation using indigenous yeasts in small concrete tanks. This gentle method, with moderate extraction, preserves the authenticity of the fruit. Aging in concrete tanks and stoneware jars enhances the wine's finesse, resulting in a pure, unfined, and unfiltered wine.
