Nota Bene 2021 retour_par_12 Complete destemming of the grapesThis Gamay is hand harvested to maximize berry quality. Whole cluster fermentation and malolactic fermentation impart a pleasing roundness to the wine. Ten months of aging in oak barrels enriches its aromatic profile, giving it an elegant and balanced structure. Grown on clay siliceous soil, this wine offers a pure expression of its terroir while respecting gentle winemaking practices, with very low use of sulfites.
